Blueberry Muffins

Light, fluffy and full of blueberries.

Ingredients

2 cupsButtermilk baking mix
½ cupSugar
¾ cupMilk
1 ea.Egg, large
2 Tbsp.Vegetable oil
2 Tbsp.Butter, melted
1 tsp.Almond extract
1 cupFLAV-R-PAC® Blueberries

Directions

  1. Preheat oven to 400°F. Line or spray twelve 2½ inch muffin cups.
  2. In a large bowl, mix together baking mix, sugar, milk, egg, vegetable oil, melted butter and almond extract; mixture will be lumpy.
  3. Fold in blueberries and divide batter equally among muffin cups.
  4. Bake for 13 to 15 minutes or until golden brown and toothpick inserted comes out clean.
