Blueberry Muffins
Light, fluffy and full of blueberries.
Ingredients
| 2 cups | Buttermilk baking mix |
| ½ cup | Sugar |
| ¾ cup | Milk |
| 1 ea. | Egg, large |
| 2 Tbsp. | Vegetable oil |
| 2 Tbsp. | Butter, melted |
| 1 tsp. | Almond extract |
| 1 cup | FLAV-R-PAC® Blueberries |
Directions
- Preheat oven to 400°F. Line or spray twelve 2½ inch muffin cups.
- In a large bowl, mix together baking mix, sugar, milk, egg, vegetable oil, melted butter and almond extract; mixture will be lumpy.
- Fold in blueberries and divide batter equally among muffin cups.
- Bake for 13 to 15 minutes or until golden brown and toothpick inserted comes out clean.
