Blueberry Tarts

Prepared with our FLAV-R-PAC® Classic Fruits • Blueberries

Ingredients

16 oz.FLAV-R-PAC® Blueberries, divided
6 ea.Prepared, pre-baked 3” tart shells (or make fresh)
½ cupSugar
1 Tbsp.Cornstarch
2 Tbsp.Cold water
2 tsp.Lemon juice

Directions

  1. Set aside ¾ cup blueberries.
  2. Evenly distribute remaining blueberries among the 6 baked tart shells.
  3. Place the set aside berries in a sauce pan and mash; add sugar to mashed berries and bring to a boil.
  4. Add cold water to cornstarch, stir to blend.
  5. Slowly add blended cornstarch to hot berry mixture, stirring constantly; cook until thickened; stir in lemon juice and immediately pour the hot berry mixture into the filled tart shells.
  6. Cool. Serve plain or with your favorite topping.
Yield:Six 3" tart shells
