Blueberry Tarts
Prepared with our FLAV-R-PAC® Classic Fruits • Blueberries
Ingredients
| 16 oz. | FLAV-R-PAC® Blueberries, divided |
| 6 ea. | Prepared, pre-baked 3” tart shells (or make fresh) |
| ½ cup | Sugar |
| 1 Tbsp. | Cornstarch |
| 2 Tbsp. | Cold water |
| 2 tsp. | Lemon juice |
Directions
- Set aside ¾ cup blueberries.
- Evenly distribute remaining blueberries among the 6 baked tart shells.
- Place the set aside berries in a sauce pan and mash; add sugar to mashed berries and bring to a boil.
- Add cold water to cornstarch, stir to blend.
- Slowly add blended cornstarch to hot berry mixture, stirring constantly; cook until thickened; stir in lemon juice and immediately pour the hot berry mixture into the filled tart shells.
- Cool. Serve plain or with your favorite topping.
