Apricot Mustard Glazed Pork with Vegetables

Prepared with our FLAV-R-PAC® or WESTPAC® Quick ’n Easy Combos® Rice Stir Fry

Ingredients

12 oz.Pork Chops, boneless, cut into ½
1 Tbsp.Vegetable oil
1 Tbsp.Balsamic vinegar
16 oz.FLAV-R-PAC® or WESTPAC® Rice Stir Fry
¼ cupApricot jam
1 Tbsp.Dijon-style mustard
To tasteSalt & pepper

Directions

  1. In wok or large non-stick skillet heat oil over medium-high heat, add pork and cook for 5 minutes or until no longer pink.
  2. Remove pork from the pan and set aside.
  3. Add ¼ cup water and Rice Stir Fry to pan; cover and cook for 5 minutes until hot.
  4. In a small bowl combine jam, vinegar, and mustard.
  5. Add sauce and pork to vegetables and cook 2-3 minutes while stirring. Season to taste and serve. *For food safety and quality cook to a temperature of 165°F.
