Apricot Mustard Glazed Pork with Vegetables
Prepared with our FLAV-R-PAC® or WESTPAC® Quick ’n Easy Combos® Rice Stir Fry
Ingredients
| 12 oz. | Pork Chops, boneless, cut into ½ |
| 1 Tbsp. | Vegetable oil |
| 1 Tbsp. | Balsamic vinegar |
| 16 oz. | FLAV-R-PAC® or WESTPAC® Rice Stir Fry |
| ¼ cup | Apricot jam |
| 1 Tbsp. | Dijon-style mustard |
| To taste | Salt & pepper |
Directions
- In wok or large non-stick skillet heat oil over medium-high heat, add pork and cook for 5 minutes or until no longer pink.
- Remove pork from the pan and set aside.
- Add ¼ cup water and Rice Stir Fry to pan; cover and cook for 5 minutes until hot.
- In a small bowl combine jam, vinegar, and mustard.
- Add sauce and pork to vegetables and cook 2-3 minutes while stirring. Season to taste and serve. *For food safety and quality cook to a temperature of 165°F.
