Baked Fish with Vegetable Marinara

Prepared with our FLAV-R-PAC® or WESTPAC® Quick ’n Easy Combos® Asparagus Stir Fry

Ingredients

16 oz.Asparagus Stir Fry
4 tsp.Butter
To tasteSalt & Pepper
4 ea.White fish fillets (halibut, sea bass, cod, orange roughy)
½ cupTomato marinara sauce

Directions

  1. Preheat oven to 500°F.
  2. Cut four 12″ x 10″ rectangles of foil. Place a quarter of vegetables in center of each foil; add a teaspoon of butter to each, lightly season with salt and pepper.
  3. Top with fish fillets and spoon 2 tablespoons marinara sauce over each. Seal foil up and around fish, leave room for steam to build up.
  4. Place foil packets on sheet pan, bake on bottom oven rack for 15 minutes or until fish turns opaque and flakes with a fork. *For food safety and quality cook to a temperature of 165°F.
