Cider Glazed Chicken and Vegetables
Prepared with our FLAV-R-PAC® or WESTPAC® Quick ’n Easy Combos® Yellow Carrot Stir Fry
Ingredients
| 2 tsp. | Vegetable oil |
| 4 ea. | Chicken breasts, boneless |
| To taste | Salt & pepper |
| 1 cup | Apple cider or juice |
| 2 Tbsp. | Butter, melted |
| 1 Tbsp. | Brown sugar |
| 1 Tbsp. | Cornstarch |
| 2 tsp. | Dijon-style mustard |
| 16 oz. | FLAV-R-PAC® or WESTPAC® Yellow Carrot Stir Fry |
Directions
- In large skillet, heat oil over high heat.
- Season chicken with salt and pepper and cook 3 minutes per side.
- In small jar combine cider, butter, brown sugar, cornstarch, and mustard. Shake to blend. Add to pan and bring to a simmer for 5 minutes while stirring.
- Add vegetables and cook an additional 5 minutes, stirring gently halfway through cooking time. Season and serve. *For food safety and quality cook to a temperature of 165°F.
