Easy Pork Roast with Stew Vegetables
Prepared with our WESTPAC® Classic Vegetabes • Southern Style Stew Vegetables
Ingredients
| 2 ½ lb. | Pork roast |
| To taste | Salt & pepper |
| 16 oz. | WESTPAC® Southern Style Stew Vegetables |
| 1 cup | Chicken or vegetable broth |
| 1 Tbsp. | Olive oil |
| ½ - 1 tsp. | Garlic, minced |
| ½ tsp. | Dried rosemary, crushed |
| ½ tsp. | Dried thyme, crushed |
Directions
- Preheat oven to 425°F. In a 9″ x 12″ roasting pan, generously season roast with salt and pepper and cook for 20 minutes.
- Remove pan from oven, lower temperature to 350°F and arrange vegetables around roast. Combine broth, oil, garlic and rosemary; pour over vegetables.
- Return pan to oven and bake for 30 minutes (internal temperature of meat should read 160-170°F). Remove pan from oven and cover with foil and let rest for 10 minutes before carving. Slice and serve. *For food safety and quality cook to a temperature of 165°F.
