Easy Pork Roast with Stew Vegetables

Prepared with our WESTPAC® Classic Vegetabes • Southern Style Stew Vegetables

Ingredients

2 ½ lb.Pork roast
To tasteSalt & pepper
16 oz.WESTPAC® Southern Style Stew Vegetables
1 cupChicken or vegetable broth
1 Tbsp.Olive oil
½ - 1 tsp.Garlic, minced
½ tsp.Dried rosemary, crushed
½ tsp.Dried thyme, crushed

Directions

  1. Preheat oven to 425°F. In a 9″ x 12″ roasting pan, generously season roast with salt and pepper and cook for 20 minutes.
  2. Remove pan from oven, lower temperature to 350°F and arrange vegetables around roast. Combine broth, oil, garlic and rosemary; pour over vegetables.
  3. Return pan to oven and bake for 30 minutes (internal temperature of meat should read 160-170°F). Remove pan from oven and cover with foil and let rest for 10 minutes before carving. Slice and serve. *For food safety and quality cook to a temperature of 165°F.
