Sugar Snap Pea Fried Rice with Chicken
Prepared with our FLAV-R-PAC® or WESTPAC® Quick ’n Easy Combos® Sugar Snap™ Pea Stir Fry
Ingredients
| 1 Tbsp. | Vegetable oil |
| 3 cups | Rice, cooked and cooled |
| 2 ea. | Eggs, lightly whipped |
| 16 oz. | FLAV-R-PAC® or WESTPAC® Sugar Snap™ Pea Stir Fry |
| 1 cup | Chicken breast, cooked and diced |
| 2 Tbsp. | Soy sauce |
Directions
- In large skillet heat oil over medium-high heat.
- Add rice and cook for 5 minutes, stirring constantly. Make a well in the middle, add eggs and scramble until cooked. Toss into rice mixture.
- Add vegetables, chicken, soy sauce; cook for 5 minutes while stirring. Season and serve. *For food safety and quality cook to a temperature of 165°F.
