Sugar Snap Pea Fried Rice with Chicken

Prepared with our FLAV-R-PAC® or WESTPAC® Quick ’n Easy Combos® Sugar Snap™ Pea Stir Fry

Ingredients

1 Tbsp.Vegetable oil
3 cupsRice, cooked and cooled
2 ea.Eggs, lightly whipped
16 oz.FLAV-R-PAC® or WESTPAC® Sugar Snap™ Pea Stir Fry
1 cupChicken breast, cooked and diced
2 Tbsp.Soy sauce

Directions

  1. In large skillet heat oil over medium-high heat.
  2. Add rice and cook for 5 minutes, stirring constantly. Make a well in the middle, add eggs and scramble until cooked. Toss into rice mixture.
  3. Add vegetables, chicken, soy sauce; cook for 5 minutes while stirring. Season and serve. *For food safety and quality cook to a temperature of 165°F.
