Mediterranean Chicken and Roasted Vegetables

Prepared with our FLAV-R-PAC® or WESTPAC® Quick ’n Easy Combos® Roasted Gold Potato Blend - Lemon & Herb Seasoned

Ingredients

1 Tbsp.Olive oil
1 lb.Chicken breast, boneless, skinless, cut into strips
14 oz.FLAV-R-PAC® or WESTPAC® Roasted Gold Potato Blend - Lemon & Herb Seasoned
1 ½ cupsCanned tomatoes, diced
To tasteSalt & Pepper
2 oz.Feta cheese, crumbled or grated parmesan

Directions

  1. Heat oil in large skillet on high. Add diced chicken and cook until no longer pink.
  2. Add Roasted Gold Potato Blend and tomatoes. Cover and cook for 6-8 minutes.
  3. Season with salt and pepper; top with feta or parmesan cheese and serve. *For food safety and quality cook to a temperature of 165°F.
