Mediterranean Chicken and Roasted Vegetables
Prepared with our FLAV-R-PAC® or WESTPAC® Quick ’n Easy Combos® Roasted Gold Potato Blend - Lemon & Herb Seasoned
Ingredients
| 1 Tbsp. | Olive oil |
| 1 lb. | Chicken breast, boneless, skinless, cut into strips |
| 14 oz. | FLAV-R-PAC® or WESTPAC® Roasted Gold Potato Blend - Lemon & Herb Seasoned |
| 1 ½ cups | Canned tomatoes, diced |
| To taste | Salt & Pepper |
| 2 oz. | Feta cheese, crumbled or grated parmesan |
Directions
- Heat oil in large skillet on high. Add diced chicken and cook until no longer pink.
- Add Roasted Gold Potato Blend and tomatoes. Cover and cook for 6-8 minutes.
- Season with salt and pepper; top with feta or parmesan cheese and serve. *For food safety and quality cook to a temperature of 165°F.
