Cauliflower Soup
Prepared with FLAV-R-PAC® or WESTPAC® Premium Vegetables • Cauliflower
Ingredients
| 2 Tbsp. | Butter |
| 1 cup | Onions, chopped |
| 16 oz. | Cauliflower florets |
| 1 med. | Potato, peeled and diced |
| 3 cups | Chicken broth |
| 1 tsp. | Salt |
| ⅛ tsp. | White pepper |
| 1 Tbsp. | Chives, chopped |
Directions
- In a 3 quart saucepan, melt butter with onions, cook until soft. Add cauliflower, potato and broth. Cover and bring to a simmer. Cook 15 minutes, or until potatoes are tender.
- Using a ladle, purée soup in a blender until smooth. Stir in salt, pepper and chives. Sprinkle each serving with shredded cheddar cheese, if desired.
