Cauliflower Soup

Prepared with FLAV-R-PAC® or WESTPAC® Premium Vegetables • Cauliflower

Ingredients

2 Tbsp.Butter
1 cupOnions, chopped
16 oz.Cauliflower florets
1 med.Potato, peeled and diced
3 cupsChicken broth
1 tsp.Salt
⅛ tsp.White pepper
1 Tbsp.Chives, chopped

Directions

  1. In a 3 quart saucepan, melt butter with onions, cook until soft. Add cauliflower, potato and broth. Cover and bring to a simmer. Cook 15 minutes, or until potatoes are tender.
  2. Using a ladle, purée soup in a blender until smooth. Stir in salt, pepper and chives. Sprinkle each serving with shredded cheddar cheese, if desired.
