Hoppin´ John

Prepared with FLAV-R-PAC® or WESTPAC® Classic Vegetables • Blackeye Peas

Ingredients

8 oz.Pork sausage
1 cupOnions, chopped
1 tsp.Garlic, minced
16 oz.Blackeye Peas
2 ˝ cupsBeef broth
1 tsp.Red pepper flakes, crushed
˝ tsp.White pepper
1 tsp.Salt
1 cupRice, uncooked

Directions

  1. In a large skillet, cook sausage, onions and garlic over medium-high heat for about 10 minutes or until sausage is no longer pink. Drain off excess fat.
  2. Add blackeye peas, beef broth, spices and rice. Bring to a boil, reduce heat and simmer for 20-25 minutes.
