Hoppin´ John
Prepared with FLAV-R-PAC® or WESTPAC® Classic Vegetables • Blackeye Peas
Ingredients
| 8 oz. | Pork sausage |
| 1 cup | Onions, chopped |
| 1 tsp. | Garlic, minced |
| 16 oz. | Blackeye Peas |
| 2 ˝ cups | Beef broth |
| 1 tsp. | Red pepper flakes, crushed |
| ˝ tsp. | White pepper |
| 1 tsp. | Salt |
| 1 cup | Rice, uncooked |
Directions
- In a large skillet, cook sausage, onions and garlic over medium-high heat for about 10 minutes or until sausage is no longer pink. Drain off excess fat.
- Add blackeye peas, beef broth, spices and rice. Bring to a boil, reduce heat and simmer for 20-25 minutes.
