Southwest Corn and Black Bean Salad
Prepared with FLAV-R-PAC® or WESTPAC® Classic Vegetables • Super Sweet White Corn
Ingredients
| 16 oz. | Super Sweet White Corn |
| 2 cans (14 oz.) | Black beans, drained |
| 2 cups | Red bell pepper, chopped |
| ½ cup | Cilantro, chopped |
| ¼ cup | Lime juice |
Directions
- Bring ½ cup of water and corn to a boil in a saucepan. Cook for 1 minute. Rinse with cold water and drain well.
- In bowl combine corn, black beans, red peppers, cilantro and lime juice. Chill until ready to use.
