Southwest Corn and Black Bean Salad

Prepared with FLAV-R-PAC® or WESTPAC® Classic Vegetables • Super Sweet White Corn

Ingredients

16 oz.Super Sweet White Corn
2 cans (14 oz.)Black beans, drained
2 cupsRed bell pepper, chopped
½ cupCilantro, chopped
¼ cupLime juice

Directions

  1. Bring ½ cup of water and corn to a boil in a saucepan. Cook for 1 minute. Rinse with cold water and drain well.
  2. In bowl combine corn, black beans, red peppers, cilantro and lime juice. Chill until ready to use.
Yield:8-10 servings
