Asparagus with Sun-Dried Tomato Vinaigrette

Prepared with our FLAV-R-PAC® or WESTPAC® Premium Vegetables • Asparagus Cut Spears

Ingredients

2 Tbsp.Sun-dried tomatoes, chopped
2 Tbsp.White wine vinegar
1 Tbsp.Water
4 Tbsp.Olive oil
1 cloveGarlic
12 oz.Asparagus Cut Spears
4 Tbsp.Feta cheese, crumbled

Directions

  1. In a blender combine tomatoes, vinegar, water and garlic. Blend until smooth; while blending slowly add olive oil.
  2. Cook asparagus according to package directions. Arrange spears on platter, drizzle with vinaigrette and sprinkle with feta cheese. *For food safety and quality cook to a temperature of 165°F.
