Asparagus with Sun-Dried Tomato Vinaigrette

Ingredients
| 2 Tbsp. | Sun-dried tomatoes, chopped |
| 2 Tbsp. | White wine vinegar |
| 1 Tbsp. | Water |
| 4 Tbsp. | Olive oil |
| 1 clove | Garlic |
| 12 oz. | Asparagus Cut Spears |
| 4 Tbsp. | Feta cheese, crumbled |
Directions
- In a blender combine tomatoes, vinegar, water and garlic. Blend until smooth; while blending slowly add olive oil.
- Cook asparagus according to package directions. Arrange spears on platter, drizzle with vinaigrette and sprinkle with feta cheese. *For food safety and quality cook to a temperature of 165°F.
