Butter Beans with Tomatoes and Green Chilies
Prepared with FLAV-R-PAC® or WESTPAC® Classic Vegetables • Speckled Butter Beans
Ingredients
| 1 Tbsp. | Butter or margarine |
| 1 cup | Onions, chopped |
| 1 tsp. | Garlic, minced |
| 1 can (14.5 oz.) | Tomatoes, diced |
| 1 can (4 oz.) | Green chilies, diced |
| ¼ tsp. | Black pepper |
| 1 tsp. | Salt |
| 16 oz. | Speckled Butter Beans |
Directions
- In a large saucepan, sauté onion and garlic in butter for 5 minutes, stirring constantly.
- Stir in tomatoes, chilies, salt and pepper.
- Add beans and heat to a boil. Cover and simmer for 15 minutes, stirring occasionally.
