Butter Beans with Tomatoes and Green Chilies

Prepared with FLAV-R-PAC® or WESTPAC® Classic Vegetables • Speckled Butter Beans


1 Tbsp.Butter or margarine
1 cupOnions, chopped
1 tsp.Garlic, minced
1 can (14.5 oz.)Tomatoes, diced
1 can (4 oz.)Green chilies, diced
¼ tsp.Black pepper
1 tsp.Salt
16 oz.Speckled Butter Beans


  1. In a large saucepan, sauté onion and garlic in butter for 5 minutes, stirring constantly.
  2. Stir in tomatoes, chilies, salt and pepper.
  3. Add beans and heat to a boil. Cover and simmer for 15 minutes, stirring occasionally.
