Crispy Potatoes with Carrots and Thyme

Ingredients

¼ cupVegetable or olive oil
16 oz.Southern Style Hash Browns
1 cupCarrots, shredded
⅓ cupGreen Onion, chopped
2 tsp.Thyme, finely chopped
¾ tsp.Salt

Directions

  1. In a large non-stick skillet heat oil on medium-high heat. Add hash browns and cook 6 minutes; stirring frequently.
  2. Add carrots, onions and thyme. Cook an additional 6 minutes; stirring frequently. Season to taste and serve.
Yield:6-8 servings
