Okra with Sausage and Tomatoes
Prepared with FLAV-R-PAC® or WESTPAC® Classic Vegetables • Whole Baby Okra
Ingredients
| ½ lb. | Pork sausage, bulk |
| 1 med. | Green pepper, diced |
| 1 cup | Onions, chopped |
| 1 tsp. | Garlic, minced |
| 1 can (14.5 oz.) | Tomatoes, diced |
| ¼ cup | Water |
| ½ tsp. | Cumin, ground |
| 1 tsp. | Chili powder |
| ½ tsp. | Salt |
| ¼ tsp. | Cayenne pepper |
| 16 oz. | Whole Baby Okra |
Directions
- In a large skillet, cook sausage, green pepper, onion and garlic over medium-high heat for 10 minutes or until sausage is no longer pink.
- Add tomatoes, water, and seasonings. Stir to blend.
- Add okra and heat to a boil. Reduce heat, cover and simmer for 20 minutes or until okra and green peppers are tender.
- Serve over cooked rice.
