Okra with Sausage and Tomatoes

Prepared with FLAV-R-PAC® or WESTPAC® Classic Vegetables • Whole Baby Okra

Ingredients

½ lb.Pork sausage, bulk
1 med.Green pepper, diced
1 cupOnions, chopped
1 tsp.Garlic, minced
1 can (14.5 oz.)Tomatoes, diced
¼ cupWater
½ tsp.Cumin, ground
1 tsp.Chili powder
½ tsp.Salt
¼ tsp.Cayenne pepper
16 oz.Whole Baby Okra

Directions

  1. In a large skillet, cook sausage, green pepper, onion and garlic over medium-high heat for 10 minutes or until sausage is no longer pink.
  2. Add tomatoes, water, and seasonings. Stir to blend.
  3. Add okra and heat to a boil. Reduce heat, cover and simmer for 20 minutes or until okra and green peppers are tender.
  4. Serve over cooked rice.
Yield:4-6 servings
