Rigatoni and Vegetables with Tomato Sauce

Prepared with our FLAV-R-PAC® or WESTPAC® Quick ’n Easy Combos® Mediterranean Vegetables

Ingredients

4 oz.Mild Italian sausage, split and remove casings
1 cupItalian style tomatoes, canned, crushed
¼ cupRed wine
¼ tsp.Red pepper flakes, dry
16 oz.Mediterranean Vegetables
½ lb.Rigatoni pasta, (cooked according to directions)
¼ cupParmesan cheese, shaved

Directions

  1. In large non-stick skillet cook sausage for 4-5 minutes.
  2. Add tomatoes,wine and red pepper. Stir while bringing to a simmer. Cook uncovered for 5 minutes.
  3. Add vegetables and cook an additional 5 minutes, stirring gently.
  4. Toss with rigatoni and serve with parmesan cheese. *For food safety and quality cook to a temperature of 165°F.
Yield:4 servings
