Rigatoni and Vegetables with Tomato Sauce
Prepared with our FLAV-R-PAC® or WESTPAC® Quick ’n Easy Combos® Mediterranean Vegetables
Ingredients
| 4 oz. | Mild Italian sausage, split and remove casings |
| 1 cup | Italian style tomatoes, canned, crushed |
| ¼ cup | Red wine |
| ¼ tsp. | Red pepper flakes, dry |
| 16 oz. | Mediterranean Vegetables |
| ½ lb. | Rigatoni pasta, (cooked according to directions) |
| ¼ cup | Parmesan cheese, shaved |
Directions
- In large non-stick skillet cook sausage for 4-5 minutes.
- Add tomatoes,wine and red pepper. Stir while bringing to a simmer. Cook uncovered for 5 minutes.
- Add vegetables and cook an additional 5 minutes, stirring gently.
- Toss with rigatoni and serve with parmesan cheese. *For food safety and quality cook to a temperature of 165°F.
