Smothered Okra and Tomatoes
Prepared with FLAV-R-PAC® or WESTPAC® Classic Vegetables • FLAV-R-PAC® Cut Okra
Ingredients
| 4 slices | Bacon, cut into ½ pieces |
| 1 cup | Onions, diced |
| 1 tsp. | Garlic, minced |
| 1 can (14.5 oz.) | Tomatoes, diced |
| ¼ cup | Water |
| ¾ tsp. | Thyme, whole |
| 1 ½ tsp. | Salt |
| ¼ tsp. | Cayenne pepper |
| 16 oz. | Cut Okra |
Directions
- Fry bacon, onions and garlic in a large skillet over medium-high heat for 10 minutes.
- Add tomatoes, water and seasonings. Stir to blend.
- Add okra and heat to a boil. Reduce heat, cover and simmer for 20 minutes.
- Serve over cooked rice.
