Smothered Okra and Tomatoes

Prepared with FLAV-R-PAC® or WESTPAC® Classic Vegetables • FLAV-R-PAC® Cut Okra

Ingredients

4 slicesBacon, cut into ½ pieces
1 cupOnions, diced
1 tsp.Garlic, minced
1 can (14.5 oz.)Tomatoes, diced
¼ cupWater
¾ tsp.Thyme, whole
1 ½ tsp.Salt
¼ tsp.Cayenne pepper
16 oz.Cut Okra

Directions

  1. Fry bacon, onions and garlic in a large skillet over medium-high heat for 10 minutes.
  2. Add tomatoes, water and seasonings. Stir to blend.
  3. Add okra and heat to a boil. Reduce heat, cover and simmer for 20 minutes.
  4. Serve over cooked rice.
