Preparation
1. Keep bags frozen until ready to use. Open bag and place frozen contents in a soup kettle, stock pot or double boiler.
2. Add 1 quart of hot water and heat to 180°F (check temperature with a thermometer), stir occasionally. Do not exceed 190°F. Important: It is essential to reach 180°F for standard food safety and to ensure optimum thickness (viscosity).
3. Cover with a lid that is slightly open, reduce heat and hold for 30-45 minutes per package instructions. Important: During service, maintain temperature of 145°-155°F for standard food safety.
Storage
Store at or below 0ºF (-18°F) or store in freezer compartment of the refrigerator until ready to use.
