Vegetable Brushetta

Ingredients
| 14 lbs. | Country Style sourdough bread, sliced |
| 1 qt. | Olive oil, divided |
| 50 ea. | Garlic, whole cloves, peeled |
| 25 lbs | FLAV-R-PAC Italian Vegetables |
| ¾ cup | Minced garlic |
| 6 ¼ cups | Chopped basil |
| 3 lbs. | Parmesan cheese, shredded |
Directions
- Brush bread with olive oil on both sides; place on sheet pans and broil until golden brown; remove from heat.
- Rub garlic cloves over the top surface to flavor bread, discard garlic or mince for other purposes.
- Blanch Italian Vegetables in boiling water for 2 minutes; drain and toss vegetables with 1 quart olive oil, garlic and basil.
- To serve: plate 2 pieces bread; top with 4 ounces Italian Vegetables and sprinkle with cheese. Additional serving tip: top bread slices with a 6-ounce grilled fish fillet and top with Italian Vegetables for a heartier entrée.
