Vegetable Brushetta

FLAV-R-PAC® Italian Vegetables

Ingredients

14 lbs.Country Style sourdough bread, sliced
1 qt.Olive oil, divided
50 ea.Garlic, whole cloves, peeled
25 lbsFLAV-R-PAC Italian Vegetables
¾ cupMinced garlic
6 ¼ cupsChopped basil
3 lbs.Parmesan cheese, shredded

Directions

  1. Brush bread with olive oil on both sides; place on sheet pans and broil until golden brown; remove from heat.
  2. Rub garlic cloves over the top surface to flavor bread, discard garlic or mince for other purposes.
  3. Blanch Italian Vegetables in boiling water for 2 minutes; drain and toss vegetables with 1 quart olive oil, garlic and basil.
  4. To serve: plate 2 pieces bread; top with 4 ounces Italian Vegetables and sprinkle with cheese. Additional serving tip: top bread slices with a 6-ounce grilled fish fillet and top with Italian Vegetables for a heartier entrée.
