Ranchers Chuckwagon Omelette

FLAV-R-PAC® Chuckwagon Corn

Ingredients

300 ea.Large eggs, whipped with 1 ½ quarts water
25 lbs.FLAV-R-PAC Chuckwagon Corn, thawed
2 cupsVegetable oil
6 ¼ lbs.Jack or pepper cheese, shredded
1 ½ qts.Chopped green onions
200 ea.Corn tortillas (6 inch) or sliced bread
6 ¼ qts.Salsa, red or green
GarnishCilantro

Directions

  1. To prepare omelettes, heat 1 teaspoon oil in sauté pan, add 4 ounces Chuckwagon Corn and cook 30 to 60 seconds.
  2. Add 6 ounces whipped eggs; turn heat to low; slowly cook 1 to 2 minutes.
  3. Sprinkle one side with 1 ounce cheese and 1 tablespoon green onions; continue to cook until egg is set. Fold one side egg over the other.
  4. Plate omelette and garnish with warm corn tortillas or toast, 2 ounces salsa and a sprig of cilantro.
