Ranchers Chuckwagon Omelette
FLAV-R-PAC® Chuckwagon Corn
Ingredients
| 300 ea. | Large eggs, whipped with 1 ½ quarts water |
| 25 lbs. | FLAV-R-PAC Chuckwagon Corn, thawed |
| 2 cups | Vegetable oil |
| 6 ¼ lbs. | Jack or pepper cheese, shredded |
| 1 ½ qts. | Chopped green onions |
| 200 ea. | Corn tortillas (6 inch) or sliced bread |
| 6 ¼ qts. | Salsa, red or green |
| Garnish | Cilantro |
Directions
- To prepare omelettes, heat 1 teaspoon oil in sauté pan, add 4 ounces Chuckwagon Corn and cook 30 to 60 seconds.
- Add 6 ounces whipped eggs; turn heat to low; slowly cook 1 to 2 minutes.
- Sprinkle one side with 1 ounce cheese and 1 tablespoon green onions; continue to cook until egg is set. Fold one side egg over the other.
- Plate omelette and garnish with warm corn tortillas or toast, 2 ounces salsa and a sprig of cilantro.
