Honey-Mustard Chicken with Country Vegetables

| 12 ½ lbs. | Chicken, cooked and shredded |
| 7 ¾ lbs. | Walnuts, toasted |
| 3 qts. | Honey |
| 24 oz. | Dijon mustard |
| 1 ½ qts. | Orange juice |
| 31 ½ lbs. | Wild and long grain rice, cooked |
Directions
- In large container, combine vegetables, chicken and walnuts.
- In a large bowl, combine honey, mustard and orange juice; add to vegetable-chicken mixture and toss.
- Pour mixture into steam table pans, cover and bake at 375°F for 40 to 45 minutes. Serve 7 ounces vegetablechicken mixture over 6 ounces cooked wild and long grain rice.
