FLAV-R-PAC® Flavor Fiesta

Ingredients

24 lbs.FLAV-R-PAC Flavor Fiesta Vegetables, frozen
5 ¼ qtsCoconut milk
1 ½ cupsThai spice red curry paste
2 cupsFresh mint, chopped
2 cupsFresh basil, chopped
16 oz.Lime juice
31 lbs.Cooked rice
37 ½ lbs.Grilled salmon steaks or fillets

Directions

  1. Whisk coconut milk with curry paste.
  2. In a large stock pot, combine curried milk with Flavor Fiesta Vegetables and bring to a simmer. Cook 15 minutes or until vegetables are heated through.
  3. Add herbs and lime juice; stir to combine flavors. To serve: plate 4 ounces rice, 6 ounces salmon and 6 ounces of vegetables.
