Pacific Vegetables & Salmon
FLAV-R-PAC® Flavor Fiesta
Ingredients
| 24 lbs. | FLAV-R-PAC Flavor Fiesta Vegetables, frozen |
| 5 ¼ qts | Coconut milk |
| 1 ½ cups | Thai spice red curry paste |
| 2 cups | Fresh mint, chopped |
| 2 cups | Fresh basil, chopped |
| 16 oz. | Lime juice |
| 31 lbs. | Cooked rice |
| 37 ½ lbs. | Grilled salmon steaks or fillets |
Directions
- Whisk coconut milk with curry paste.
- In a large stock pot, combine curried milk with Flavor Fiesta Vegetables and bring to a simmer. Cook 15 minutes or until vegetables are heated through.
- Add herbs and lime juice; stir to combine flavors. To serve: plate 4 ounces rice, 6 ounces salmon and 6 ounces of vegetables.
