Scandinavian Vegetable-Salmon Rolls

Ingredients
| 19 lbs. | FLAV-R-PAC Scandinavian Vegetables |
| 19 lbs. | Smoked salmon, thinly sliced into approx 4" |
| 2 qts. | Oil/vinegar-based salad dressing |
| ½ cup | Chopped fresh dill |
| ½ cup | Lemon zest |
| 8 ea. | Avocados |
| 7 lbs. | French baguettes, cut in ½" diagonal slices, |
| 3 qts. | Sour Cream |
| Garnish | Fresh dill |
Directions
- Blanch vegetables in boiling water for 1 minute. Drain, rinse with cold water, drain again and chill.
- Combine salad dressing with dill and lemon zest; pour over vegetables and toss to coat.
- To assemble rolls: place 1 ounce vegetables diagonally across the Middle of each 1 ounce slice of salmon. Add a thin slice of avocado and fold the bottom corner over filling while rolling up mixture into a cone shape. Chill rolls until service.
- Plate 3 salmon-vegetable rolls, each on a piece of toasted baguette, placed in a spiral design with a dollop of sour cream in the middle and a fresh sprig of dill.
