Southwestern Fish & Chips

FLAV-R-PAC® Chuckwagon Corn

Ingredients

15 lbs.FLAV-R-PAC Chuckwagon Corn, frozen
15 lbs.Black beans, cooked
10 lbs.Tomatoes, diced
3 ¾ lbs.Red Onions, diced
1 qt.Lime juice
8 cupsCilantro, chopped
5 Tbsp.Cumin
3 Tbsp.Salt
1 Tbsp.Pepper
100 ea.Red snapper, cod or halibut fillets (6 ounces each)
6 ¼ lbs.Tortilla chips

Directions

  1. Blanch Chuckwagon Corn in boiling water for 1 minute; drain and chill.
  2. In large container(s), combine corn with beans, tomatoes, red onion, lime juice, cilantro, cumin, salt and pepper; toss to mix ingredients. Chill until service.
  3. Grill fish 3 to 4 minutes per side. Plate fish, serve with 6 ounces black bean and corn salad and 1 ounce tortilla chips. Optional: garnish with lime wedges and sprigs of cilantro.
