Southwestern Fish & Chips
FLAV-R-PAC® Chuckwagon Corn
Ingredients
| 15 lbs. | FLAV-R-PAC Chuckwagon Corn, frozen |
| 15 lbs. | Black beans, cooked |
| 10 lbs. | Tomatoes, diced |
| 3 ¾ lbs. | Red Onions, diced |
| 1 qt. | Lime juice |
| 8 cups | Cilantro, chopped |
| 5 Tbsp. | Cumin |
| 3 Tbsp. | Salt |
| 1 Tbsp. | Pepper |
| 100 ea. | Red snapper, cod or halibut fillets (6 ounces each) |
| 6 ¼ lbs. | Tortilla chips |
Directions
- Blanch Chuckwagon Corn in boiling water for 1 minute; drain and chill.
- In large container(s), combine corn with beans, tomatoes, red onion, lime juice, cilantro, cumin, salt and pepper; toss to mix ingredients. Chill until service.
- Grill fish 3 to 4 minutes per side. Plate fish, serve with 6 ounces black bean and corn salad and 1 ounce tortilla chips. Optional: garnish with lime wedges and sprigs of cilantro.
