Sweet & Sour Chicken with Broccoli

Ingredients
| 16 oz. | Vegetable oil |
| 15 lbs. | Boneless, skinless chicken breasts, cut into pieces |
| 1 cup | Minced garlic |
| 1 cup | Minced ginger |
| 32 lbs. | FLAV-R-PAC® Broccoli Normandy |
| 7 1/2 lbs | Red pepper, cut into strips or chunks |
| 3 qts. | Prepared sweet 'n sour sauce or glaze |
| 2 cups | Chopped fresh basil |
| 35 lbs. | Cooked rice |
Directions
- In large skillet or stock pots, heat oil and add chicken, garlic, ginger; cook 6 to 10 minutes, stirring chicken occasionally until cooked.
- Add Broccoli Normandy and red pepper to chicken, cook 10 to 15 minutes stirring gently, until vegetables are heated through.
- Add sweet & sour sauce and basil, toss mixture to combine. Serve immediately. For volume feeding: pour mixture into steam table pans and serve side by side next to steamed rice, or fill steam table pans half full of rice and top with chicken and Broccoli Normandy mixture. For individual service: plate 5 ½ ounces rice with 8 ounces chicken- Broccoli Normandy mixture.
