Thai Stir Fry with Chicken Satay

Ingredients

| 28 lbs. | Boneless chicken tenders, or breasts, cut int |
| 10 oz. | Vegetable oil |
| 40 lbs. | FLAV-R-PAC Deluxe Stir Fry, frozen |
Directions
- Make peanut sauce using recipe below or use your own signature sauce.
- Rinse and dry chicken; thread on wooden skewers, one per stick,in a weave fashion. Place on sheet pans, brush with 1 quart peanut sauce. Reserve remaining sauce.
- Broil chicken skewers 2 minutes per side and keep warm.
- Divide oil in large skillets or woks, heat over medium high until smoking. Add FLAV-R-PAC Stir Fry Vegetables and cook 8 to 10 minutes, stirring gently throughout, until vegetables are heated through. Add reserved peanut sauce among pans and toss to coat vegetables. Continue to cook 2 more minutes. TO SERVE: Plate 8 ounces stir fry vegetables with lo mein noodles and arrange 4 skewers of chicken off to one side. Serve immediately.
