Thai Stir Fry with Chicken Satay

Ingredients

4 ½ qts.Prepared peanut sauce (recipe below or signat
28 lbs.Boneless chicken tenders, or breasts, cut int
10 oz.Vegetable oil
40 lbs.FLAV-R-PAC Deluxe Stir Fry, frozen

Directions

  1. Make peanut sauce using recipe below or use your own signature sauce.
  2. Rinse and dry chicken; thread on wooden skewers, one per stick,in a weave fashion. Place on sheet pans, brush with 1 quart peanut sauce. Reserve remaining sauce.
  3. Broil chicken skewers 2 minutes per side and keep warm.
  4. Divide oil in large skillets or woks, heat over medium high until smoking. Add FLAV-R-PAC Stir Fry Vegetables and cook 8 to 10 minutes, stirring gently throughout, until vegetables are heated through. Add reserved peanut sauce among pans and toss to coat vegetables. Continue to cook 2 more minutes. TO SERVE: Plate 8 ounces stir fry vegetables with lo mein noodles and arrange 4 skewers of chicken off to one side. Serve immediately.
