Citrus Glazed Caribbean Vegetables

Prepared using our Grande Classic® Caribbean Blend

Ingredients

24 lbs.FLAV-R-PAC Grande Classics Caribbean Vegetables
2 lbs.Butter, softened
1 ½ cupsOrange marmalade
½ cupFinely grated lime zest
½ cupFinely grated lemon zest
½ cupChopped chives
1 Tbs. ea.Salt and pepper

Directions

  1. Add 1 cup of water to each of 3 large stockpots, and divide the FLAV-R-PAC Grande Classics Caribbean Blend Vegetables among the pots. Cover and bring to a boil. Remove lids, stir to separate vegetables and drain immediately. Divide vegetables into 3 hotel pans or large containers.
  2. In a mixing bowl, combine butter, marmalade, lime zest, lemon zest, chives, salt and pepper. Blend mixture until smooth.
  3. Divide citrus butter among warm vegetable blends, and gently toss to coat.
