Citrus Glazed Caribbean Vegetables
Prepared using our Grande Classic® Caribbean Blend
Ingredients
| 24 lbs. | FLAV-R-PAC Grande Classics Caribbean Vegetables |
| 2 lbs. | Butter, softened |
| 1 ½ cups | Orange marmalade |
| ½ cup | Finely grated lime zest |
| ½ cup | Finely grated lemon zest |
| ½ cup | Chopped chives |
| 1 Tbs. ea. | Salt and pepper |
Directions
- Add 1 cup of water to each of 3 large stockpots, and divide the FLAV-R-PAC Grande Classics Caribbean Blend Vegetables among the pots. Cover and bring to a boil. Remove lids, stir to separate vegetables and drain immediately. Divide vegetables into 3 hotel pans or large containers.
- In a mixing bowl, combine butter, marmalade, lime zest, lemon zest, chives, salt and pepper. Blend mixture until smooth.
- Divide citrus butter among warm vegetable blends, and gently toss to coat.
