Corsica Dijon Vinaigrette

Ingredients
| 2 Tbsp. | Red wine vinegar |
| 2 Tbsp. | Olive Oil |
| 2 Tbsp. | Frozen orange juice concentrate, thawed |
| 2 tsp. | Dijon mustard |
| To taste | Salt & Pepper |
| 2 Tbsp. | Olive oil |
| 1 tsp. | Garlic, minced |
| 6 cups | Corsica Blend |
| 1 cup (4 oz.) | Carrots, shredded or julienne-cut |
| ¼ cup | Walnut pieces, toasted |
Directions
- For dressing, whisk together red wine vinegar, olive oil, orange juice concentrate and mustard. Add salt and pepper to taste.
- In a non-stick skillet pan over medium-high heat, cook garlic in olive oil for 1 minute. Stir in vegetables and cook until crisp-tender. Remove from heat.
- Toss vegetables with dressing. Top with walnuts before serving.
