Corsica Dijon Vinaigrette

Ingredients

2 Tbsp.Red wine vinegar
2 Tbsp.Olive Oil
2 Tbsp.Frozen orange juice concentrate, thawed
2 tsp.Dijon mustard
To tasteSalt & Pepper
2 Tbsp.Olive oil
1 tsp.Garlic, minced
6 cupsCorsica Blend
1 cup (4 oz.)Carrots, shredded or julienne-cut
¼ cupWalnut pieces, toasted

Directions

  1. For dressing, whisk together red wine vinegar, olive oil, orange juice concentrate and mustard. Add salt and pepper to taste.
  2. In a non-stick skillet pan over medium-high heat, cook garlic in olive oil for 1 minute. Stir in vegetables and cook until crisp-tender. Remove from heat.
  3. Toss vegetables with dressing. Top with walnuts before serving.
Yield:4 cups (2 to 4 servings)
