Corsica Succotash

Ingredients
| 2 oz. | Good quality peppered bacon, diced |
| 5 cups | Corsica Blend |
| ½ cup (4 oz.) | Frozen or canned corn, drained |
| 1 Tbsp. | Cider vinegar |
| ½ tsp. | Onion powder |
| To taste | Salt and pepper |
Directions
- Cook bacon in a non-stick pan until crisp. Remove bacon to side dish, reserving 1 to 2 tablespoons drippings in pan.
- Add vegetables to pan and cook, stirring occasionally, over medium-high heat until crisp tender.
- Stir in corn, cider vinegar, onion powder and bacon. Cook additional 1 to 2 minutes. Season to taste with salt and pepper.
