Corsica Succotash

Island Blends • Corsica Blend

Ingredients

2 oz.Good quality peppered bacon, diced
5 cupsCorsica Blend
½ cup (4 oz.)Frozen or canned corn, drained
1 Tbsp.Cider vinegar
½ tsp.Onion powder
To tasteSalt and pepper

Directions

  1. Cook bacon in a non-stick pan until crisp. Remove bacon to side dish, reserving 1 to 2 tablespoons drippings in pan.
  2. Add vegetables to pan and cook, stirring occasionally, over medium-high heat until crisp tender.
  3. Stir in corn, cider vinegar, onion powder and bacon. Cook additional 1 to 2 minutes. Season to taste with salt and pepper.
Yield:4 cups (3 to 4 servings)
