Crisp Malibu Vegetables on Rosemary-Lemon Linguini

Ingredients
| 20 lbs. | Linguini, dry |
| 50 lbs. | FLAV-R-PAC Grande Classic Malibu Blend |
| 1 gal. | Chicken broth, warm |
| 4 lbs. | Goat cheese |
| 1 qt. | Extra virgin olive oil |
| 16 oz. | Lemon juice |
| 2 cups | Finely chopped parsley |
| 1 cup | Finely chopped fresh rosemary or ½ cup dried |
| 2 lbs. | Grated parmesan cheese |
Directions
- In large pot(s), bring water to boil and cook linguini according to package instructions. FOR INDIVIDUAL SERVICE: Place 8 ounces vegetables in steam pan, cover and steam for 8 minutes or until heated through. Meanwhile, in shallow bowl, combine 1 ounce broth, about 1 tablespoon goat cheese, 1 teaspoon oil, 1/2 teaspoon juice, 1/2 teaspoon parsley and 1/4 teaspoon rosemary. Refresh 6 ounces linguini in simmering water, drain, add to bowl with ingredients and toss with 1 tablespoon Parmesan until combined. To serve, swirl pasta in center of shallow bowl and top with vegetables. FOR VOLUME FEEDING: Divide vegetables among steam pans and steam for 10 minutes or until heated through. Meanwhile, divide broth, goat cheese, oil, juice, and herbs among 8 large mixing bowls. Drain linguini; divide among bowls with ingredients and toss. Divide pasta into warm steam table pans, top with hot vegetables and sprinkle with Parmesan cheese.
