Cyprus Island Salad

Prepared using our Grande Classic® Cyprus Blend

Ingredients

5 cupsCyprus - Island Blend
¾ cupEnglish cucumbers, coarsely chopped
½ cupRoma Tomatoes, coasely chopped
¼ cupFeta cheese, crumbled
3 Tbsp.Olive oil
1 to 2 tsp.Dried oregano
½ to 1 tsp.Dried thyme
To tasteSalt and pepper

Directions

  1. Steam vegetables until crisp-tender; drain and chill.
  2. In a bowl, combine vegetables, cucumber, tomatoes and feta cheese.
  3. For dressing, blend olive oil, oregano and thyme. Gently stir in vegetables.
  4. Season to taste with salt and peppers.
Yield:4 cups (2 to 4 servings)
