Spicy Island Prawn Noodle Soup

Prepared using our Grande Classic® Cozumel Blend

Ingredients

2 cupsChicken broth
½ tsp.Red pepper flakes
2 cupsCozemel Blend, frozen
4 oz.Prawns, shells removed
2 tsp.Vietnamese sauce
1 cup (4 oz.)Udon or rice noodles, uncooked
2 tsp.Green onion, sliced
2 tsp.Basil, chopped

Directions

  1. In small stock pot, heat chicken broth to simmer; add pepper flakes, vegetables, prawns and fish sauce. Return to simmer; cook until prawns are pink, about 2 to 3 minutes.
  2. In a seperate saucepan, heat 4 cups water to boiling. Add udon noodles; cook for 3 to 4 minutes. Drain and keep warm.
  3. To plate: Ladle half of noodles in bottom of bowl. Add half of vegetable/broth mixture.
  4. Garnish each bowl with green onions and basil.
