Spicy Island Prawn Noodle Soup
Prepared using our Grande Classic® Cozumel Blend
Ingredients
| 2 cups | Chicken broth |
| ½ tsp. | Red pepper flakes |
| 2 cups | Cozemel Blend, frozen |
| 4 oz. | Prawns, shells removed |
| 2 tsp. | Vietnamese sauce |
| 1 cup (4 oz.) | Udon or rice noodles, uncooked |
| 2 tsp. | Green onion, sliced |
| 2 tsp. | Basil, chopped |
Directions
- In small stock pot, heat chicken broth to simmer; add pepper flakes, vegetables, prawns and fish sauce. Return to simmer; cook until prawns are pink, about 2 to 3 minutes.
- In a seperate saucepan, heat 4 cups water to boiling. Add udon noodles; cook for 3 to 4 minutes. Drain and keep warm.
- To plate: Ladle half of noodles in bottom of bowl. Add half of vegetable/broth mixture.
- Garnish each bowl with green onions and basil.
