Tropical Island Vegetables
Grande Classics® Caribbean Blend
Ingredients
| 24 lbs. | FLAV-R-PAC Grand Classics Caribbean Blend, fr |
| 1 qt. | Rice vinegar |
| 1 qt. | Pineapple juice |
| 1 cup | Grated fresh ginger |
| 4 ozs. | Peeled and quartered shallots |
| 1 Tbs. | Salt |
| ½ qt. | Extra virgin olive oil |
Directions
- Add 1 cup of water to each of 3 large stockpots, and divide the FLAV-R-PAC Grande Classics Caribbean Blend Vegetables among the pots. Cover and bring to a boil. Remove lids, stir to seperate vegetables and drain immediately. Divide vegetables into 3 hotel pans or large containers.
- In a blender or food processor, combine vinegar, pineapple juice, ginger, shallots and salt. Whirl mixture 30 seconds, and with machine still running, slowly drizzle in olive oil until blended.
- Divide vinaigrette amoung warm vegetables, and gently toss to coat.
