Grande Classics® Caribbean Blend

Ingredients

24 lbs.FLAV-R-PAC Grand Classics Caribbean Blend, fr
1 qt.Rice vinegar
1 qt.Pineapple juice
1 cupGrated fresh ginger
4 ozs.Peeled and quartered shallots
1 Tbs.Salt
½ qt.Extra virgin olive oil

Directions

  1. Add 1 cup of water to each of 3 large stockpots, and divide the FLAV-R-PAC Grande Classics Caribbean Blend Vegetables among the pots. Cover and bring to a boil. Remove lids, stir to seperate vegetables and drain immediately. Divide vegetables into 3 hotel pans or large containers.
  2. In a blender or food processor, combine vinegar, pineapple juice, ginger, shallots and salt. Whirl mixture 30 seconds, and with machine still running, slowly drizzle in olive oil until blended.
  3. Divide vinaigrette amoung warm vegetables, and gently toss to coat.
