Pacific Rim Shrimp and Black Bean Salad

Ingredients

5 qts.Coconut-lime dressing (recipe below)
25 lbs.FLAV-R-PAC Deluxe Stir Fry
15 ½ lbs.Small cooked shrimp, tail off (grilled adds e
12 lbs.Canned black beans, drained
12 oz.Diced Red Onion
8 lbs.Romaine lettuce spears, cleaned
100 ea.Sprigs of cilantro, for garnish

Directions

  1. Make coconut-lime dressing using recipe below.
  2. Add 1 gallon water to each of three large stock pots, and divide the FLAV-R-PAC Deluxe Stir Fry Vegetable Blend among pots. Cover and bring to a boil. Stir to separate vegetables. Drain immediately, rinse with cold water and drain again thoroughly. Place vegetables in large containers and chill.
  3. Add equal amounts of shrimp, black beans and red onion to chilled vegetables in containers and toss with 3 1/2 quarts coconut-lime dressing. Reserve remaining 1 1/2 quarts dressing. TO SERVE: Arrange 2 ounces romaine lettuce (about 3 to 4 spears) on each service plate. Spoon 8 ounces shrimp and black bean salad mixture over the top, and drizzle each with an extra tablespoon of reserved coconut-lime dressing. Garnish with cilantro.
