Apricot Pork Stir Fry with Rice

FLAV-R-PAC® Stir Fry Vegetables

Ingredients

28 lbs.Boneless, lean pork, cut into ½" slices
1 ½ qts.Balsamic vinegar, divided
1 cupCornstarch
1 ¼ qts.Vegetable oil, divided
3 qts.Water
50 lbs.FLAV-R-PAC Stir Fry Vegetables
3 qts.Apricot jam
3 cupsDijon-style mustard
To TasteSalt & Pepper

Directions

  1. In large container, combine pork with 24 ounces balsamic vinegar, cornstarch and 12 ounces vegetable oil (reserve remaining vinegar and oil). Toss to coat meat.
  2. Divide reserved oil among several skillets or stock pots. Heat over medium high until almost smoking. Add pork, cook 8 to 10 minutes stirring occasionally, until cooked. Remove pork from pans and keep warm in steam table pans.
  3. Over medium high heat, deglaze pans by adding water and stirring. Add FLAV-R-PAC Stir Fry Vegetables with Rice, cover and cook 10 minutes.
  4. In large measuring cup, combine apricot jam, reserved vinegar and mustard. Stir to blend.
  5. Uncover vegetables, separate with a spoon and add the apricot sauce and cooked pork. Cook mixture 5 minutes, stirring occasionally, to blend flavors. Serve on-line in full-size steam table pans or plate 12 ounces per order.
