Apricot Pork Stir Fry with Rice
FLAV-R-PAC® Stir Fry Vegetables
Ingredients
| 28 lbs. | Boneless, lean pork, cut into ½" slices |
| 1 ½ qts. | Balsamic vinegar, divided |
| 1 cup | Cornstarch |
| 1 ¼ qts. | Vegetable oil, divided |
| 3 qts. | Water |
| 50 lbs. | FLAV-R-PAC Stir Fry Vegetables |
| 3 qts. | Apricot jam |
| 3 cups | Dijon-style mustard |
| To Taste | Salt & Pepper |
Directions
- In large container, combine pork with 24 ounces balsamic vinegar, cornstarch and 12 ounces vegetable oil (reserve remaining vinegar and oil). Toss to coat meat.
- Divide reserved oil among several skillets or stock pots. Heat over medium high until almost smoking. Add pork, cook 8 to 10 minutes stirring occasionally, until cooked. Remove pork from pans and keep warm in steam table pans.
- Over medium high heat, deglaze pans by adding water and stirring. Add FLAV-R-PAC Stir Fry Vegetables with Rice, cover and cook 10 minutes.
- In large measuring cup, combine apricot jam, reserved vinegar and mustard. Stir to blend.
- Uncover vegetables, separate with a spoon and add the apricot sauce and cooked pork. Cook mixture 5 minutes, stirring occasionally, to blend flavors. Serve on-line in full-size steam table pans or plate 12 ounces per order.
