Bacon, Blue Cheese & Vegetable Pasta

Ingredients

15 lbs.Linguini pasta, fresh or dry, cooked until te
34 oz.Olive oil, divided
2 cupsMinced garlic
30 lbs.FLAV-R-PAC® Italian Vegetables, frozen
11 lbs.Tomatoes, diced
2 ¾ lbs.Blue cheese, crumbled
2 lbs.Cooked bacon, diced
3 ¾ lbs.Parmesan cheese, shredded or shaved

Directions

  1. Toss hot pasta in 22 ounces olive oil and the garlic; set aside, keep warm.
  2. Cook Italian Vegetables in boiling water for 3 to 4 minutes, or until vegetables are cooked through, but still firm; drain.
  3. In large pot, combine vegetables with tomato, blue cheese, bacon and remaining 12 ounces olive oil; keep warm. For volume feeding: divide pasta into steam table pans, top each with hot vegetable mixture and sprinkle with Parmesan cheese. For individual service: serve 6 ounces hot pasta in a shallow bowl and top with 6 ounces hot vegetable mixture. Sprinkle with 1/2 ounce Parmesan cheese or offer cheese tableside.
