Bacon, Blue Cheese & Vegetable Pasta

Ingredients
| 15 lbs. | Linguini pasta, fresh or dry, cooked until te |
| 34 oz. | Olive oil, divided |
| 2 cups | Minced garlic |
| 30 lbs. | FLAV-R-PAC® Italian Vegetables, frozen |
| 11 lbs. | Tomatoes, diced |
| 2 ¾ lbs. | Blue cheese, crumbled |
| 2 lbs. | Cooked bacon, diced |
| 3 ¾ lbs. | Parmesan cheese, shredded or shaved |
Directions
- Toss hot pasta in 22 ounces olive oil and the garlic; set aside, keep warm.
- Cook Italian Vegetables in boiling water for 3 to 4 minutes, or until vegetables are cooked through, but still firm; drain.
- In large pot, combine vegetables with tomato, blue cheese, bacon and remaining 12 ounces olive oil; keep warm. For volume feeding: divide pasta into steam table pans, top each with hot vegetable mixture and sprinkle with Parmesan cheese. For individual service: serve 6 ounces hot pasta in a shallow bowl and top with 6 ounces hot vegetable mixture. Sprinkle with 1/2 ounce Parmesan cheese or offer cheese tableside.
