Italian Vegetable Gratinée

Ingredients
| 10 lbs. | Dry penne pasta |
| 20 lbs | FLAV-R-PAC Winter Mix Vegetables, frozen |
| 1¼ qts. | Basil pesto sauce |
| 5 lbs. | Mozzarella cheese, diced ½" |
| 2 ½ lbs. | Cheddar and fontina cheese blend, grated |
| 2 ½ lbs. | Parmesan cheese, shredded |
| 5 qts. | White sauce |
Directions
- Bring large pot of salted water to a boil. Add pasta and cook until tender. Add frozen vegetables during last 2 minutes of cooking; drain.
- In large container, toss pasta, vegetables, pesto, mozzarella, cheddar and fontina.
- Place in buttered steam table pans and sprinkle with Parmesan cheese. Bake uncovered at 350°F for 20 minutes. Option: cook 3 minutes under the broiler for a golden crisp top.
