Italian Vegetable Gratinée

FLAV-R-PAC® Winter Mix

Ingredients

10 lbs.Dry penne pasta
20 lbsFLAV-R-PAC Winter Mix Vegetables, frozen
1¼ qts.Basil pesto sauce
5 lbs.Mozzarella cheese, diced ½"
2 ½ lbs.Cheddar and fontina cheese blend, grated
2 ½ lbs.Parmesan cheese, shredded
5 qts.White sauce

Directions

  1. Bring large pot of salted water to a boil. Add pasta and cook until tender. Add frozen vegetables during last 2 minutes of cooking; drain.
  2. In large container, toss pasta, vegetables, pesto, mozzarella, cheddar and fontina.
  3. Place in buttered steam table pans and sprinkle with Parmesan cheese. Bake uncovered at 350°F for 20 minutes. Option: cook 3 minutes under the broiler for a golden crisp top.
