Squash Stuffed with Winter Vegetables

Ingredients

75 lbs.Acorn, butternut or pumpkin squash (50 squash
50 lbs.FLAV-R-PAC Winter Mix Vegetables, frozen
2 ¼ lbs.Garlic butter
6 ¼ lbs.Parmesan cheese, shredded

Directions

  1. Bake squash halves in 375°F oven until tender, about 45 to 60 minutes.
  2. Cook vegetables in boiling water for 10 minutes or steam vegetables 6 to 8 minutes until hot but still crisp.
  3. Toss hot vegetables with garlic butter and cheese.
  4. Fill cooked squash halves with 8 ounces buttered vegetables. Serve immediately or run under broiler to melt cheese.
