Vegetable Polenta

Ingredients

4 lbs.Instant polenta
8 lbs.FLAV-R-PAC Vegetarian Dinner Blend
1 lb.Asiago or parmesan cheese, shredded, divided
6 oz.Butter, cut into pieces
4 Tbs.Finely chopped fresh rosemary
2 tsp.Ground black pepper

Directions

  1. Bring 8 quarts salted water to a boil. Slowly pour in polenta while stirring; cook 2 minutes.
  2. Add vegetables, half of cheese, butter, rosemary and pepper; stir to combine and cook 3 to 5 minutes while stirring until mixture thickens.
  3. Divide vegetable-polenta into 4 steam table pans; smooth out surface and sprinkle with remaining cheese. Cool until firm. To heat for service, broil until golden brown; cut into squares. Serving suggestion: delicious served as breakfast side dish to eggs, or served alongside grilled sausages and topped with tomato sauce.
