Vegetable Polenta

Ingredients
| 4 lbs. | Instant polenta |
| 8 lbs. | FLAV-R-PAC Vegetarian Dinner Blend |
| 1 lb. | Asiago or parmesan cheese, shredded, divided |
| 6 oz. | Butter, cut into pieces |
| 4 Tbs. | Finely chopped fresh rosemary |
| 2 tsp. | Ground black pepper |
Directions
- Bring 8 quarts salted water to a boil. Slowly pour in polenta while stirring; cook 2 minutes.
- Add vegetables, half of cheese, butter, rosemary and pepper; stir to combine and cook 3 to 5 minutes while stirring until mixture thickens.
- Divide vegetable-polenta into 4 steam table pans; smooth out surface and sprinkle with remaining cheese. Cool until firm. To heat for service, broil until golden brown; cut into squares. Serving suggestion: delicious served as breakfast side dish to eggs, or served alongside grilled sausages and topped with tomato sauce.
